INGREDIENTS
- 2 packs of Love Potatoes Garlic and Herb Potatoes
- 100g streaky bacon, fried and roughly chopped
- ½ cup of corn (fresh, frozen or tinned)
- ½ cup peas (fresh, frozen or tinned)
- ¾ cup cottage cheese
- 3 spring onions, white part only
- Salt and pepper
- 2 tbsp Parmesan cheese (optional)
DIRECTIONS
- Preheat the oven to 180°C. Cut the Love Potatoes in half then use a small spoon to scoop out the middle, to about 2mm from the edge. Place the filling into a large bowl. Place the potato skins, skin down, on a lined baking tray. Bake the potato skins for 15 minutes.
- Meanwhile mash the potato filling, then add in the bacon, peas, corn, cottage cheese, spring onions, salt and pepper and gently mix ingredients until combined. Remove the potato skins from the oven and then fill with 1-2 tbsp of filling. Repeat with remaining potatoes.
- Top the potatoes with Parmesan cheese and then return to the oven for 15 minutes or until golden.
