INGREDIENTS
- 500g fettuccini pasta
- 8 rashers bacon, diced
- ½ cup olive oil
- Juice of half a lemon
- 120g spinach
- Salt and pepper
- Parmesan to serve
DIRECTIONS
- Cook pasta as per packet instructions.
- Meanwhile heat a large non-stick frypan and add in the diced bacon. Fry on medium heat for 3-4 minutes until brown. Set aside.
- Drain the pasta, reserving ½ cup pasta cooking water. Return pasta back to the pot. Then stir through bacon, olive oil, cooking water, lemon juice and spinach.
- Season with salt and pepper. Serve with grated parmesan!
