Grilled Peach Salad with Honey Vinaigrette

Preparation:15 minutes

Serves 4

INGREDIENTS

  • 2 Peaches cut into wedges
  • 1 tbsp extra virgin olive oil
  • 1/3 cup of pecans roughly chopped
  • 100g Danish Feta
  • 1/2 cup olive oil (vinaigrette)
  • 1/3 cup red wine vinegar (vinaigrette)
  • 2 tbsp honey (vinaigrette)
  • 2 tbsp minced spring onions (vinaigrette)
  • 1 bag of italian leaf mix

DIRECTIONS

  1. Heat a griddle pan on high heat, and brush it with olive oil. Spread the peach wedges over the pan and grill for 2mins then flip and grill for another 2mins. Remove peach from pan and allow to cool for 10mins. Meanwhile prepare remaining ingredients
  2. To make the dressing, combine all the ingredients in a bowl or jar and use a fork to whisk together the ingredients
  3. On a large platter, layer the Italian Leaf blend, shaved cucumber, grilled peaches, pecans and feta. Drizzle with dressing
