Sourdough with beetroot dip, avocado and basil

Preparation: 15 minutes

Serves: 4-6

INGREDIENTS

  • 1 cup cooked organic beetroot
  • 1 cup organic toasted walnuts
  • ¼ cup organic extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp organic date syrup
  • 1 small organic garlic clove
  • Sourdough bread
  • Avocado
  • Feta
  • Basil
  • Watercress
  • Walnuts

DIRECTIONS

  1. Place all ingredients into a high-speed blender or food processor, blend until smooth and creamy.
  2. Toast the sourdough in a toaster until golden brown.
  3. Top with sliced avocado, crumbled feta, chopped basil, walnuts, and watercress. Enjoy!
