INGREDIENTS
- 1 onion, roughly chopped
- 2 cloves garlic
- 1 pack Organic Love Beets
- 1 can black beans, drained
- 2 carrots, grated
- 1 cup brown rice, cooked
- 1 1/3 cup almond meal
- ½ cup parsley
- 1 tbsp paprika
- 1 tsp cumin
- 1 tsp coriander powder
- Salt and pepper
- 2 Lebanese cucumbers, thinly sliced
- 2 avocados, scooped from skin and thinly sliced
- 3 tbsp Tahini dressing
- 6 tbsp water
- 300g organic spinach
- 10 wholemeal bread rolls
- Substitute all ingredients for organic alternatives for a wholesome organic meal!
DIRECTIONS
- Preheat oven to 180°C and line two baking trays with baking paper.
- Place onion, garlic, Organic Love Beets and black beans in a food processor. Process on high until just combined, but not smooth. Pour mixture into a bowl and then mix in carrot, brown rice, 1 cup of almond meal, parsley and seasonings.
- The mixture will be quite wet. Form two tablespoons of mixture into the shape of a patty a place on the lined baking tray. Repeat with remaining mixture. Sprinkle patties with the remaining almond meal then bake in the oven for 30 minutes. Allow to cool for 5-10 minutes before removing from the tray.
- To assemble, mix together tahini and water until smooth and spread on the wholemeal bun. Layer the pattie with cucumber, avocado and organic spinach.
