Spinach and Bacon Pasta

Preparation: 20 minutes

Serves: 4

INGREDIENTS

  • 500g fettuccini pasta
  • 8 rashers bacon, diced
  • ½ cup olive oil
  • Juice of half a lemon
  • 120g spinach
  • Salt and pepper
  • Parmesan to serve

DIRECTIONS

  1. Cook pasta as per packet instructions.
  2. Meanwhile heat a large non-stick frypan and add in the diced bacon. Fry on medium heat for 3-4 minutes until brown. Set aside.
  3. Drain the pasta, reserving ½ cup pasta cooking water. Return pasta back to the pot. Then stir through bacon, olive oil, cooking water, lemon juice and spinach.
  4. Season with salt and pepper. Serve with grated parmesan!
