Salmon Skewers Salad

Serves: 8 -10 skewers

INGREDIENTS

  • Skewers/salad
  • 400g Salmon (Skin off)
  • 1 x 120g Woolworths Leafy Mix
  • 70g Soft Feta Cheese
  • 2 Lemons (Sliced into rounds)
  • 2 x Zucchinis (sliced into long ribbons)
  • 10 Skewers
  • 1/2 cup Soy Sauce
  • 1/4 cup Water
  • 1 tsp Garlic
  • 1 tsp Ginger
  • 1 tsp Onion Powder
  • 2 Tbsp Brown Sugar
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Honey

DIRECTIONS

  1. Add all marinade ingredients into a large bowl and mix well until combined.
  2. Cut salmon into 1-inch pieces and place in marinade bowl. Cover bowl and place in fridge to marinade for at least 6 hours or overnight.
  3. Once salmon has marinade, thread salmon piece onto skewer, followed by a zucchini ribbon, another salmon piece, and a folded lemon slice in the middle. Repeat pattern for all skewers.
  4. Grill the skewers on a non-stick Griddle pan (or a normal non-stick pan), turning occasionally, until fish is opaque throughout, about 7-10 minutes.
  5. Serve skewers on top of Woolworths Leafy Mix with a squeeze of lemon and crumbled feta
